It’s been a long week, and we’re very ready for the weekend. How about you? We hope you’re cozy in your own kitchen, with heaps of fresh spring greens and asparagus to enjoy, and perhaps some plans for a home cooked Saturday meal. What are your plans? What kind of spring comfort food are you cooking up in your kitchen this weekend?
Is it 5:00 yet? Because the drinks and snacky bites from this past week are looking mighty tempting. I’m thinking those real Mexican margaritas would go mighty fine with a handful of cheddar olives. A coupe glass with that pretty Four Bitters Cocktail would also be excellent company for our radicchio salad with red quinoa and avocado. Or go full-on springtime with a strawberry gin smash and a plate of risotto studded with asparagus spears. And a bowl of caramel popcorn for dessert. Bring on cocktail hour!
Think all food bloggers have fancy, designer kitchens? As Ashlae of Oh Ladycakes will tell you, that’s not the case! She’s actually a little embarrassed by her Denver rental kitchen. “People come over to the house and expect something immaculate,” she tells Apartment Therapy, “and they’re like, ‘Oh, this is where you do all of your baking?’ Yep.” But we say: cheers to that! We like a cook who isn’t deterred by her kitchen’s shortcomings. (We all have them!)
One of the sadder parts of working with a team distributed all over the country is the fact that we can’t close up shop early on Friday and have a drink together. But we can still raise a glass to the fun of working together, and to Cocktail Week, with a virtual happy hour! Q: I made my first ever vegan key lime pie today for dinner guests. I put in twice as much lime juice as the recipe called for and it still wasn’t as limey/tart as we like. I also used silken tofu and was a bit confused because the recipe called for extra firm silken tofu, which the store didn’t have.
